Lemony Pea & Herby Hummus Flatbreads

Ingredients

  • 170g peas, blanched
  • 2 tbsp extra virgin olive oil
  • 2 spring onions, finely sliced
  • A few sprigs of fresh mint, roughly chopped
  • Zest of 1 lemon
  • 2 small flatbreads

To Serve:

  • 6 radishes, thinly sliced
  • 75g vegan cream cheese (such as Nush Foods)
  • Micro herbs
  • Extra virgin olive oil
  • Extra mint leaves
  • 1 tub ChicP Herby Hummus

Fresh, vibrant and packed with flavour, these flatbreads bring together lemony peas, crisp radishes and creamy herby hummus for the ultimate light lunch or snack. Freshness meets creaminess in every bite!

1. Prepare the pea and mint mixture In a bowl mix the blanched peas with olive oil, sliced spring onions, chopped mint leaves and lemon zest. Season with salt and pepper to taste then set aside.

2. Warm the flatbreads Preheat the oven and place the flatbreads inside. Warm them until lightly crisp then remove.

3. Assemble and serve Spread a generous layer of ChicP Herby Hummus over each flatbread. Top with small dollops of vegan cream cheese followed by the pea mixture sliced radishes and micro herbs. Garnish with extra mint leaves and drizzle with more extra virgin olive oil for a fresh flavourful finish.
