Herby Loaded Potato Skins with ChicP Herby Hummus

  • 1 (170g) pot of ChicP Herby Hummus
  • 3 large potatoes (such as Vivaldi)
  • 250g cheddar cheese or a dairy-free alternative, shredded
  • 1/4 cup breadcrumbs (panko recommended)
  • 1/2 cup spring onions, chopped (plus extra for garnish)
  • Salt and olive oil

These herby loaded potato skins made with ChicP Herby Hummus are the ultimate comforting snack or side dish. Think crispy golden shells filled with creamy hummus cheesy goodness and a hit of fresh spring onions. They’re outrageously tasty and ridiculously easy to make, perfect for sharing (or not).

1. Bake the potatoes Preheat the oven to 180°C. Rub the potatoes with olive oil sprinkle with salt and prick them all over with a fork, this stops them from bursting. Pop them on a baking tray and bake for 2 hours until soft and fluffy inside. Let them cool slightly then cut them in half and get ready for the magic.

2. Whip up the herby hummus filling Scoop out the potato flesh into a bowl and mash it up. Stir in ChicP Herby Hummus, shredded cheddar and chopped spring onions. Season with salt to taste. Mash everything together until smooth and creamy, this is where the flavour happens!

3. Load up and bake again Spoon the filling back into the potato skins piling them high for ultimate indulgence. Sprinkle over more cheese and a handful of breadcrumbs for that crispy golden top. Bake for another 20 minutes until bubbling and totally irresistible.

4. Garnish and serve Scatter with extra spring onions for a fresh hit of flavour. Serve hot and dive straight in!
