Roast Turmeric & Cauliflower Winter Salad with ChicP Carrot, Ginger and Turmeric Hummus.

Ingredients

  • 1 cauliflower, chopped into florets
  • 500g Brussels sprouts
  • 2 beetroots, washed and chopped into wedges
  • 2 pots of ChicP Carrot, Ginger & Turmeric Hummus
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tbsp turmeric powder
  • Handful of nigella seeds
  • Olive oil
  • Salt and pepper

This vibrant, flavor packed dish is the ultimate celebration of roasted veg, creamy hummus and a silky tahini drizzle. Perfect for a wholesome lunch, a colorful side or even the star of your dinner table, this recipe brings together earthy roasted cauliflower, crispy sprouts and sweet caramelised beetroot, all elevated with the golden glow of turmeric and the zesty kick of our Carrot, Ginger & Turmeric Hummus.

Think of this as the winter warmer your taste buds need: warming spices, hearty roasted goodness and a dollop of hummus magic. Plus, it’s ridiculously easy to make, just pop everything in the oven, whip up a quick drizzle and plate like a pro.

  1. Prep your veggies. Preheat your oven to 180°C. Scatter the chopped cauliflower onto a baking tray and dust generously with turmeric, this is where the golden magic happens!
  2. Roast it up. On a separate tray, toss the beetroot and sprouts with a drizzle of olive oil, salt and pepper. Pop both trays into the oven and roast for 45 minutes, until everything is gloriously golden and caramelized.
  3. Whisk up the drizzle. While the veg is roasting, grab a small bowl and mix the tahini with lemon juice and 1 tbsp of cold water. Stir until smooth and creamy, add a splash more water if needed to reach that perfect drizzle consistency.
  4. Assemble like a pro. Grab two plates and spread half a pot of hummus per plate, making a smooth, swooshy base (because we love a bit of food styling).
  5. Time to top! Pile up the roasted cauliflower, beetroot, and sprouts over the hummus base, then drizzle generously with the tahini dressing.
  6. Finish strong. Scatter over the nigella seeds for a final pop of flavor and crunch.
