Easy, delicious and packed with flavour, this creamy herby hummus spaghetti is the perfect weeknight go-to. With minimal ingredients and maximum taste, it’s pasta with a nutritious twist.
1. Roast the cherry tomatoes Preheat the oven to 180°C. Roughly chop the cherry tomatoes and spread them out on a baking tray. Drizzle with olive oil season with salt and pepper then roast for 30 minutes until soft and caramelised.
2. Cook the spaghetti Bring a pot of salted water to a boil over medium-high heat. Add the spaghetti and cook until al dente or to your preferred texture (about 10 minutes). Drain reserving a little pasta water to help bind the sauce.
3. Prepare the herby hummus sauce In a bowl mix ChicP Herby Hummus with olive oil and lemon juice until smooth. Adjust the consistency by adding more olive oil or a splash of pasta water if needed.
4. Combine and serve Return the drained pasta to the pan add the roasted tomatoes and pour over the herby hummus sauce. Toss everything together until fully coated. Serve immediately with a sprinkle of black pepper for an extra flavour kick.
